Globally, meat products account for more than 45% of meat consumption. Developed countries account for more than 70 percent of meat consumption. From the point of view of China's situation, the current consumption is still dominated by fresh meat, accounting for about 80%, while the consumption of meat products only accounts for 20% of the whole meat. If developed countries are compared, China's meat products still have more than 2 times the development space, the proportion of low-temperature meat products will continue to increase in the future.
The industry chain of China's meat products industry mainly includes three sectors: breeding industry, slaughtering business and meat products business, and terminal sales. Meat production accounts for about a third of the world's total, with the biggest market for pork. Affected by African swine fever, China's meat output in 2019 was only 76.49 million tons, down 11.31 percent from the same period last year. According to the National Bureau of Statistics, China's meat output in 2019 was 76.49 million tons, of which pork was 42.55 million tons, accounting for 55.6 percent. 22.39 million tons of poultry meat, accounting for 29.3%; 6.67 million tons of beef, accounting for 8.7%; 4.88 million tons of mutton, accounting for 6.4% of the total.
China's meat production accounted for about 20 percent of its meat production in 2018, compared with 40-60 percent in developed countries in the same period. The rate of meat products in China still has a large room to improve, the industry scale at least more than 2 times the space for development. From the perspective of the whole world, meat products generally account for more than 45% of meat consumption, while the consumption of meat products in China only accounts for about 20% of meat consumption in 2018. Compared with the world level, China's meat has more than twice the development space. Low-temperature meat products are made in a low temperature (0-4℃) environment to inhibit microbial growth, so as to maximize the preservation of the original flavor and shelf life of meat products. In terms of the market share of meat products, the market share of low-temperature meat products continues to increase, which has exceeded 65% by 2018. Due to the characteristics of fresh and tender taste and rich influence of low-temperature meat products, the proportion of low-temperature meat products will continue to increase due to the development trend of composite consumption upgrading and health.
